Discover how to harvest and use the fresh spring growth, their nutritious and medicinal properties. We will be making medicines from spring herbs freshly gathered in the community garden.

Cultures from all over the globe have used cleansing and rejuvenating tonics, especially in spring. Spring tonics were traditionally used to remove the stagnation of the winter after diets consisting mostly of preserved foods. The tonics are intended to clean your body of accumulated wastes, to “Make your blood rise like the sap in a tree.”
Spring herbs are packed full of important minerals and vitamins to replenish our reserves and fill us full of the energy of the season.

We will look at the best ways to harvest, dry and store herbs, as well as how to make extracts from them. We’ll make a mineral rich tonic herbal vinegar and a tincture for you to take home. We’ll be tasting herbal extracts throughout the day.
